Palmier Cookies

I just love a no recipe, recipe…don’t you? With just 3 (or 4) simple ingredients, you’ll be on your way to holiday cookie bliss in no time!

These palmier cookies are so easy to make because we are letting pre-made puff pastry do all the heavy lifting in this recipe. Along with basic ingredients like sugar, butter, and cinnamon, you’ll have a delicious ( I dare you to eat just one!) cookie that you can whip up in a snap for a holiday party, get together, or just to enjoy on your own while you watch Love Actually for the 100th time.

INGREDIENTS:

  • 1 sheet vegan-friendly puff pastry, thawed

  • 29 g (2T )vegan butter, melted

  • 150 g (¾ C) granulated sugar

  • ½ tsp. cinnamon (optional)



Equipment:

  • Cookie sheet

  • Rolling pin (not necessary, but helpful)

  • Small pastry or basting brush

  • Sharp knife


Prep

  • Defrost puff pastry sheet (30-40 minutes on the counter)

  • Mix the cinnamon and sugar together (if using cinnamon)

  • Preheat oven 425 F

  • Melt butter





DIRECTIONS:

Preheat Oven 425° F / 218° C

  1. Lay your thawed puff pastry sheet on work surface and brush with half of the melted butter

  2. If using the cinnamon, mix it with the sugar to get well combined. Then sprinkle half of the sugar onto the puff pastry. Roll the sugared pastry with a rolling pin, then flip and do the same on other side

  3. Roll the pastry from the top down and the bottom up to the center so that two rolls meet in the middle

  4. Use a sharp knife to cut into ¼ ”- ⅜” pieces (If you like them a little thicker like in the video, cut about ½” wide)

  5. Place each piece about 2 inches apart on a lined cookie sheet, then let chill for 30 minutes in the fridge or 10 minutes in the freezer

  6. When chilled, place the cookie sheet on the middle rack of a preheated oven set to 425° F/ 218° C

  7. Bake for 7 minutes, then flip to bake another 7-8 minutes or until a deep golden brown

  8. When done, remove from the oven and place the cookie sheet on a cooling rack or a heat safe surface to cool for a minute. Then remove the cookies from the pan to cool further on the rack.

  9. After 10-30 minutes, the sugar will cool and harden, creating a crispy “cookie”
